In New Zealand, food manufacturers must comply with the Food Act 2014 and the Australia New Zealand Food Standards Code, both of which set strict hygiene requirements for premises, fixtures, fittings, and equipment.

The Act states “every person in charge of a food premises must ensure that the premises and any facilities, fixtures, fittings, equipment, and other things used in the manufacture, processing, packaging, storage, sale, or delivery of food are so constructed, located, installed, and maintained as to ensure, so far as reasonably practicable, that food will not be contaminated.”
This is reinforced by the Australia New Zealand Food Standards Code, developed by Food Standards Australia New Zealand (FSANZ), which requires that all fixtures, fittings, and equipment must be:“(a) suitable for the purpose for which they are used; (b) able to be effectively cleaned and, if necessary, sanitised; and (c) unable to absorb grease, food particles or water.”
Local councils build on these standards by issuing detailed design and construction guidelines for food premises. These cover everything from layout and ventilation to drainage and waste management, and include clear requirements that surfaces and fixtures must be smooth, durable, and easy to clean.
